The cobbler was a success! The guys gobbled it up within 15 minutes, and it took me about the same amount of time to make it. After more researching cobbler recipes on the web, I decided that perhaps a cobbler doesn't have to involve pie crust inside of it. That may be the way the buffet in town does it, but it doesn't mean I have to do it that way. I used my pie crumble topping I had in the freezer and just increased the amount from what I would put on top of an apple pie. It was a thick layer of delicousness on top, which made it into "cobbler." I also sprinkled some melted butter on top of the crumble topping, as that is what most recipes said to do. The result? The quickest and easiest dessert I've ever managed to make.
Apple Pie Crumb Topping
(2) cups flour
(1) cup brown sugar, packed
(3/4) cup butter, melted
(1/2) cup quick cooking oats
Combine all ingredients. Makes a large batch, set aside 1 cup for topping for apple pie or 3 cups for cobbler. Feel free to freeze the rest for future use.
