An Epic Struggle

Alright, I have a bone to pick with my favorite food of all time, cupcakes. I got a cupcake tree as a wedding present and have ever since been on the mission of creating cupcakes that are as adorable as all of the ones I see all over the blogosphere. I have used iciing from the can, different tips and they never come out as awesome as Notes From A Cottage Industry's or the cupcakery in town.

After a cupcake making hiatus, the perfect opportunity presented itself: a pumpkin carving party. I scoured the internet looking for the perfect cupcake idea and bought wilton decorator's iciing, instead of the normal canned frosting. I thought about making the cute mummy cupcakes, or getting the little spider rings and making spiderweb designs. Easy enough, right? For whatever reason, Walmart didn't have any spider rings. But they did have stretchable rats! I bake the cupcakes (this much, I can manage, I even make great chocolate ones from scratch) get my frosting and piping bag ready. The freaking wilton stuff is rock hard and won't go through my flat tips. I thin it out, too runny. Grrrrr. So I die it purple, mix it, and pipe it in circles. Still looks like crap.Frosting everywhere, blown out piping bags and cupcakes that look like crap. WHY ME?!?! WHY?!?! I put them in the carrier and threw some rats on them and called it a day, vowing to never make another cupcake ever again. Unless...you all tell me what the magic frosting you use is and the proper tip for making giant beautiful swirly iciing tops!
