Apple Pie to the Sky


Over the weekend I was lucky enough to get to can with my mother-in-law and her girlfriends. With 2 boxes of what seemed like unlimited apples, we got to peeling, coring, slicing, boiling and canning 50 cans of pre-made apple pie filling. I won't lie, we did get to use the ingenious machine that cores, slices and peels the apples in the twist of a crank, but it was still A LOT of work.
I went in without the slightest clue of why anyone would ever even want to can anything, or how one goes about doing it. I was taught the ins and outs of every step of the process, even forced to do parts I wasn't comfortable doing, and am now a strong advocate of canning. It was great being able to control the ingredients that go into your food. And by simply boiling these cans, you can preserve fresh fruit for up to 2 years!
Now, I have 12 cans of pre-made apple pie filling. I've gotten it down to a science, making my pie crust and baking the pie, the only problem is how does a family of 2 eat so much apple pie? All I can say is thank god for the shelf life of these things, otherwise we'd turn into apple pies within a month.
