After a cupcake making hiatus, the perfect opportunity presented itself: a pumpkin carving party. I thought about making the cute mummy cupcakes, or getting the little spider rings and making spiderweb designs. Easy enough, right? For whatever reason, Walmart didn't have any spider rings. But they did have stretchable rats! I bake the cupcakes (this much, I can manage, I even make great chocolate ones from scratch) get my frosting and piping bag ready. The freaking wilton stuff is rock hard and won't go through my flat tips. I thin it out, too runny. Grrrrr. So I die it purple, mix it, and pipe it in circles. Still looks like crap.

An Epic Struggle
Alright, I have a bone to pick with my favorite food of all time, cupcakes. I got a cupcake tree as a wedding present and have ever since been on the mission of creating cupcakes that are as adorable as all of the ones I see all over the blogosphere. I have used iciing from the can, different tips
and they never come out as awesome as Notes From A Cottage Industry's or the cupcakery in town.

Frosting everywhere, blown out piping bags and cupcakes that look like crap. WHY ME?!?! WHY?!?! I put them in the carrier and threw some rats on them and called it a day, vowing to never make another cupcake ever again.
Unless...you all tell me what the magic frosting you use is and the proper tip for making giant beautiful swirly iciing tops!

I have no baking tips...I don't even have a favorite frosting but I think they look really cute with the swirled purple frosting! :)
buttercream you dork... i also consulted with Tessa and she agrees that it is easy to make and pipe... why didnt you ask us earlier. Tessa always makes that crap. PS it tastes better too
I love the pictures of cupcakes! I am not good at making cupcakes, but I guess I've never really tried... I wish I had tips for you! I do like the frosting job you did though!
I love the purple icing!!! so cool!!!! Hmmm, I don't make many cupcakes, sadly, but I've heard that you can put icing in a plastic baggy, pull tight, and make a little hole at the end, then squeeze alittle out in circles. Good Luck!!

Sis! *shakes her head* Ok, here it is:
Buttercream icing 101- This is the best recipe for using at home,
1.5 cup solid veg shortning (crisco makes them in an easy butter looking rectangle so you don't have to scoop anything out of a jar, you just cut off how much you need, genious if u ask me!!)
1.5 cup (1 stick) butter
1 tsp CLEAR vanilllia extract
4 cups (or 1 pound) powdered sugar
2 tbls milk
-cream the 1st 2 things together until fluffy, then add the vanila, than add the sugar, cup by cup.
Then add the milk slowly...most important, you need to keep the bowl covered with a damp rag or cloth until you are ready to use it, otherwise it just hardens up.
As for the tip you are looking for, it is 1M or (2010)...You always have to buy this one by itself, it never comes in a set, it is huge but it is the one you are looking for trust me. P.S. Don't worry, I will send you my Wilton Cupcake Fun Book tommorow if you want, it is where I learned all this stuff from and it has AWESOME ideas for holiday bakin!! Love you!
I agree with the buttercream. I took a Wilton class (their canned stuff sucks, I agree) and their basic buttercream is easy and works well. I like your purple, though!
